Healthy eating…

…is a challenge. Especially on a student budget and when you have a love for pasta. However when the sun shines in Dunedin, I find it a little bit easier to eat healthily (this is backed up by the fact that I’ve also been sick and have been craving vegetables). So todays balmy 18c seemed the perfect day to have salad for lunch. I copied a recipe out at work a few weeks ago that I’ve been meaning to try out and it really hit the spot. It combines the great things in the food world…avocado, cherry tomatoes, basil and mozzarella.

Ingredients

1 container cherry tomatoes, cut in half

mozzarella (I used about 1/4 of a ball)

1 1/2 avocado, diced

1/3 cup basil

1/4 lemon juice

1/4 olive oil

salt and pepper

1. In a large bowl, combine the tomatoes, mozzarella and basil. Set aside

2. In a small bowl, whisk the lemon juice and olive oil, salt and pepper. Pour over tomato mixture. Toss to coat. Cover and put in the fridge for 1 hour before serving.

3. Just before serving the salad, stir in the chopped avocado.
